Our winery also harvests black summer truffe. The Tuber Aestivum, differs from other species of truffle as it is simpler to preserve. This is due to the tenacity of its rind from which we get the Italian word “Scorzone” meaning thick rind. The Tuber aestivum is a resistent species of truffle and keeps longer than other varieties allowing it to be used in a more day to day manner. This species of truffle is aromatic with intense aromas although less powerful than the than black truffles. These truffles encompass all the various aromas of woodland, they are intensely tasty and their smell could only be described as appetizing. The Tuber aestivum ripens from May to late autumn. The first truffles of the season are easily recognised by the light, less mature flesh. As the season draws on and the truffles ripen, the colour gradually becomes darker, tending towards brown.
