In our company, we produce black summer truffles. The Tuber Aestivum differs from other truffle varieties because of its strong peel, which enables a long-lasting preservation. In fact, its Italian name scorzone means thick peel.
The Tuber Aestivum is a resistant truffle that lasts longer than the other varieties. It has an intense and aromatic smell, nevertheless a bit lighter than black truffles.
The truffle encloses all the fragrances and perfumes of the forest; its taste is intense but at the same time delicate and its perfume is very appetizing.
The maturation period of the Tuber Aestivum starts from May and lasts until late autumn. The first truffles of the season are easily recognizable for their clear and less mature pulp, which will progressively become darker and darker with time.
